If you’ve ever forced your way through a bland, chalky protein bar or a shake with that unmistakable powdery aftertaste, you’re not alone.
The important thing is that you’re getting the macros in, right? So maybe taste is just a part of the compromise?
It doesn’t have to be.
When we developed Protein Candy, our benchmark wasn’t just other protein snacks. It was candy, too. So, while we wanted to create a snack that delivers 14g of protein, only 4g of sugar and 4-6g of fiber per bag, we knew it also had to taste genuinely good.
Here’s how we figured it out, and hit the snacking sweet spot…
What Makes Protein Snacks Taste Chalky, Bitter or Dry?
You might think of most protein powders as being relatively flavorless. But in reality, they’re far from a neutral ingredient.
Different protein sources bring their own sensory characteristics. Depending on the protein type and how it’s processed, these can include earthy or astringent notes. Pea protein, for example, is often associated with bitter, beany flavors, as well as dryness.
Protein can also interact with the flavors around it, changing the way aroma and taste are perceived. Taking a classic candy recipe, dumping in a load of protein powder and hoping nobody notices was never going to lead to a winning formulation.
Plus, the more protein you add, the harder it becomes to counteract those unappetizing effects.
Here’s how we balanced protein, flavor and texture without compromising the candy experience:
- A clean protein base: We use high-quality whey isolate and collagen to avoid the heavy, bitter notes of cheaper plant proteins.
- Bold fruit flavors: Bold flavors like sour watermelon and berry punch naturally cut through protein density.
- Smart sweetening: A blend of monk fruit juice concentrate and stevia delivers clean sweetness without relying on harsh sugar alcohols.
- No artificial aftertaste: Natural fruit acids balance every bite, lifting the flavor instead of masking it.
Why Texture Is Just as Important
Taste tends to draw most of the attention, but texture can just as easily ruin a protein snack before its flavor gets the chance.
Protein changes the way water, fiber, and syrup behave inside food. Depending on the formulation, increasing protein can make products firmer, denser, drier, or harder to chew.
That’s especially important when it comes to candy. Some of our all-time favourite candies are winners precisely because of their texture. Being soft without being mushy, chewy without being rubbery, and firm enough to have a satisfying bite is no small feat.
Water, gelling ingredients, and sugar can all affect that balance. Change one part of the recipe and your deliciously chewy gummy can quickly hurtle towards sticky, crown-pulling territory.
With Protein Candy, texture is never an afterthought. We worked hard to bring you a snack that genuinely satisfies candy cravings, without tasting like a shoddily disguised nutritional product.
That meant developing protein content and texture side-by-side from the very beginning, and keeping the sweet, satisfying chewiness of candy plus 14g of protein in every bag.
How We Keep Sugar Low Without Losing Sweetness
Sugar has more than one job in candy. Along with sweetness, it adds to a snack’s structure and texture.
That’s what makes reducing a snack’s sugar while retaining the same tastiness such a challenge. Take out a large amount, and you need to rebuild the perfect balance of sweetness, flavor and texture that makes candy, well, candy.
Protein Candy uses monk fruit juice concentrate and stevia leaf extract to pack a sweet punch, while keeping its sugar content to just 4g per bag.
Rather than treating reduced sugar as a simple numbers game, we balance monk fruit and stevia with delicious flavors, meaningful protein, and satisfying texture to create the kind of sweetness you expect from candy.
Why Fruity flavors Work So Well
There’s a reason Protein Candy leans into fruity flavors, including:
More than giving candy sweetness alone, the tartness and aroma of fruit helps keep the protein from dominating the snack.
Protein Candy uses citric and malic acids, both found naturally in fruits, to create that familiar sweet-tart balance. Natural flavors like raspberry, blackberry and blueberry in our Berry Punch candy, to mango, kiwi-lime and strawberry-banana in our Tropical Fruit candy, build on this.
flavor is something we experience as a whole, so that balance matters. Protein Candy is formulated so that one ingredient isn’t doing all the work, making the protein feel like part of the candy, rather than the unpleasant and dominant flavor that you have to put up with.
How We Made Protein Candy Taste Like Candy
We started out with one rule: protein could never be an excuse for bad candy.
That’s why Protein Candy relies on whey protein isolate as our base. To create a classic gummy chew without loading up on sugar, we pair collagen with prebiotic fiber, plant-based glycerine for moisture, and natural sweetness from monk fruit and stevia, finished with real fruit extracts.
Per bag, that gives us the exact nutritional profile we wanted:
- 14g of protein
- 4g of sugar
- 4-6g of fiber
Importantly, we fixed the problems with many other protein snacks, as well as keeping Protein Candy delicious and undeniably candy-like.
But "fixed" may not even be the right word here.
There are always new fruity flavors to try. A gummy can always be more satisfying. Sweetness can hit differently. As Protein Candy evolves, we keep pushing on those details, because our bar isn't simply making a technically good protein snack.
Our standard is whether you reach for another piece…and another.
Choosing a treat with meaningful protein shouldn’t mean lowering your expectations or settling for chalky tasting snacks. If it doesn't taste like candy, it shouldn’t be called candy.
